Soul Satisfying Mushroom Soup!

We all have some food on our list of favorites, which are simple to cook yet heart-warming. If I have a tiring day, I love eating mashed potatoes or baked potatoes while ghee (Clarified butter), pepper and salt and end my day on a happy note. Here I am sharing an easy to cook mushroom soup recipe with you which satisfies my soul and makes me happy and am sure will soon get added to your list of comfort-foods too once you make it!



Ingredients Required:

  • 2 tablespoons of butter

  • 1 tablespoon of refined oil

  • 5-6 cloves of garlic- finely chopped

  • 1 medium sized onion-finely chopped

  • 6-7 button mushrooms chopped (you may want to add more)

  • Salt- as per taste

  • Black Pepper- 1-2 teaspoon (as per your liking)

  • 1 tablespoon of all-purpose flour

  • 1 and half cup full cream milk

  • Warm Water

Heat a deep bottom pan on medium temperature. Add 2 tablespoons of Butter and a tablespoon of cooking oil. Oil prevents the butter from burning. Once the butter melts, add finely chopped garlic and onion and fry till the onions are translucent.

Now, add the chopped button mushrooms and fry on medium heat, do not keep stirring. You will see that the mushrooms will release water. Once this water dries, mix 1 tablespoon of all-purpose flour with water in a small bowl and add it to the pan and mix it together. To this, add salt and black pepper powder as per taste and mix. Now, add 2 cups of warm water to it and bring to boil. Pour in, 1 and half cup of full cream milk and keep cooking on low flame. The soup will start thickening.

You might want to check the taste at this point and see if it needs more salt and adjust accordingly. It is almost done! Before turning off the heat sprinkle some black pepper and add chopped coriander to it and close the lid.

I also add a dollop of butter after I turn off the heat, this step is completely up to you, the melted butter multiplies the taste.

Serve this soul satisfying soup hot with toasted garlic bread, or normal toast.
